Linda Liebig's Chocolate Cheesecake
Crust:
1-2 T butter
1 pkg chocolate wafer cookies, finely ground (8.5 oz)
pinch salt
1/3 cup melted butter
Cheesecake:
2 T butter
12 oz semi-sweet chocolate chips
24 oz cream cheese, softened
1 c sugar
3 large eggs, room temperature
1 t vanilla
2 T cocoa powder
1 1/2 c half & half
Crust:
Coat bottom and sides of 9” spring form pan with un-melted butter.
Mix cookie crumbs and melted butter and press evenly into pan.
Cheesecake:
Melt butter and chocolate together. Cool
Stir cream cheese, sugar, eggs, vanilla, cocoa powder, half & half
together with cooled chocolate mixture.
Pour into pan and bake at 350 degrees, 30 minutes, reduce heat to
325 degrees and bake 30 minutes more. Let stand in oven, door ajar,
30 additional minutes.
