Butterscotch Pie

Pie:

1# dark brown sugar
½ c all purpose flour
6 eggs – separated
2 c whole milk
½ c butter
2 baked 9 inch pie shells

Meringue:

6 egg whites
¾ t baking powder
4 T sugar

Pie:

Mix sugar and flour. Add egg yolks to milk and mix well. Add milk mixture to sugar mixture. Mix well. Add butter and cook until thick. About 10 – 15 minutes, stirring constantly.

Pour into baked pie shells.

Meringue:

Beat egg whites, adding baking powder and sugar very slowly, until stiff.

Assembly:

Top pies with meringue, covering edges. Bake at 350 degrees for 15 minutes, or until brown.

Cool and enjoy.
